Yes we are looking for any free training and information to assist in the learning. We will be on the track with the curriculum soon but do not have the bandwidth this month to devote to the learning.

you'll likely find more Central users in the Central group (this forum's name here is misleading) and they might be able to give better answers.
As a long-time SESC (on-premise managed) users I don't even have an idea what you mean by learning centers, perhaps the YouTube channels? The knowledgebase is a moderately structured source of information, though sometimes it's not easy to find what you are looking for. There exists a lot of FAQs like the ones for Central Admin, from the menu on the left you can select certain topics like Sophos Central → Management, articles are sorted with the most recently edit first so it's not too hard to find these Updates to the UI.
