The installer fails with the error:

Closer inspection of the MSI install log; 'Sophos_Server32msi [timestamp].log' shows that the call to ExportCompanyCertificate has failed. See the Technical Information section below for more logging.

The location to backup certificates chosen during the installer is not accessible to the installer at the point it attempts to write to the location.
Check that the installing user has write access to the location chosen. If you are using a remote location, maybe consider choosing a location location and move the files after the installation has completed.
